Job Requirements
- Bachelor’s or culinary degree preferred
- minimum five years of kitchen management or executive chef experience
- experience in high-volume retail, entertainment, hospitality, or restaurant setting
- extensive banquet event experience
- experience managing and developing kitchen teams
- current ServSafe certification
- physical ability to stand, walk, bend, and lift with assistance in typical entertainment center environment
Job Qualifications
- Five plus years of kitchen management or executive chef experience
- bachelor’s or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience in banquet style events
- experience managing and developing teams required
- current ServSafe certification required
- ServSafe instructor certification or ability to obtain preferred
Job Duties
- Adhere to the company’s mandated F&B menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow related to food operations
- review monthly profit & loss statements and make adjustments as needed
- work with Operations and Sales teams to plan, supervise, and execute all events, including preparation, service, and cleanup
- assist with cooking when necessary
- estimate food consumption and make appropriate purchases
- schedule staff efficiently to meet business volume changes
- recruit, hire, train, and retain kitchen staff
- develop key personnel such as sous chefs and lead cooks
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and storage of food
- manage kitchen equipment maintenance
- implement and conduct sanitation audits and cleaning schedules to comply with health regulations
- report critical issues to the General Manager
