Job Requirements

  • Bachelor’s or culinary degree preferred
  • minimum five years of kitchen management or executive chef experience
  • experience in high-volume retail, entertainment, hospitality, or restaurant setting
  • extensive banquet event experience
  • experience managing and developing kitchen teams
  • current ServSafe certification
  • physical ability to stand, walk, bend, and lift with assistance in typical entertainment center environment

Job Qualifications

  • Five plus years of kitchen management or executive chef experience
  • bachelor’s or culinary degree preferred
  • experience in high-volume retail, entertainment, hospitality, or restaurant venue required
  • extensive experience in banquet style events
  • experience managing and developing teams required
  • current ServSafe certification required
  • ServSafe instructor certification or ability to obtain preferred

Job Duties

  • Adhere to the company’s mandated F&B menu and purchasing programs
  • maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow related to food operations
  • review monthly profit & loss statements and make adjustments as needed
  • work with Operations and Sales teams to plan, supervise, and execute all events, including preparation, service, and cleanup
  • assist with cooking when necessary
  • estimate food consumption and make appropriate purchases
  • schedule staff efficiently to meet business volume changes
  • recruit, hire, train, and retain kitchen staff
  • develop key personnel such as sous chefs and lead cooks
  • ensure product quality, freshness, and presentation meet company standards
  • supervise preparation, portioning, garnishing, and storage of food
  • manage kitchen equipment maintenance
  • implement and conduct sanitation audits and cleaning schedules to comply with health regulations
  • report critical issues to the General Manager
