Job Requirements
- Minimum high school diploma or equivalent
- 5+ years of culinary and kitchen management experience
- ability to lead and train kitchen staff effectively
- knowledge of food safety and sanitation regulations
- proficiency in kitchen equipment operation
- strong organizational and inventory management skills
- ability to comply with health and safety standards
- good communication skills
- willingness to participate in client satisfaction programs
- ability to use computers including Microsoft Office and email
- ServSafe certification preferred
Job Qualifications
- A.S. degree or equivalent experience
- 5+ years of progressive culinary/kitchen management experience
- extensive catering experience preferred
- experience in high volume, complex foodservice operations
- institutional and batch cooking experience
- hands-on chef experience
- comprehensive knowledge of food and catering trends including quality, production, sanitation, food cost controls and presentation
- proficiency with Microsoft Office applications and internet
- ServSafe certification highly desirable
- strong commitment to client satisfaction activities
Job Duties
- Plans regular and modified menus according to established guidelines
- follows standardized recipes, portioning and presentation standards
- completes and utilizes daily production worksheets and waste logs
- tastes completed meals to ensure quality
- trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
- establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- maintains inventory of food and non-food supplies
- makes decisions regarding utilization of leftover food products within guidelines
- complies with federal, state and local health and sanitation regulations
- follows safety policies and procedures including occurrence reporting
- participates and attends departmental meetings and professional development programs
