Job Requirements
- Associate degree in culinary arts or equivalent apprenticeship
- Minimum five years experience in a first-class hotel, resort or restaurant
- Strong communication skills
- Ability to manage and supervise kitchen staff
- Knowledge of food safety and sanitation standards
- Experience in menu planning and budgeting
- Ability to work flexible hours including weekends and holidays

Job Duties
- Supervise the kitchen and oversee food preparation and presentation by chefs, cooks and pantry personnel, ensuring food items are prepared according to specifications
- Staff all kitchen areas, preparation areas and employee cafeteria, supervising all employees in these areas
- Maintain adequate supply of all food items such as meat, groceries, and perishables used at the resort
- Assure purchases are made using specifications and make changes when warranted
- Inspect all storage areas to ensure sanitation and that equipment functions properly
- Ensure sufficient quantities of pre-prepared items are available to meet demand and maintained in quality storage
- Requisition only scheduled quantities of items from storeroom
- Oversee breakdown of prime meat cuts by weight, minimize waste and properly utilize scraps and fat
- Manage preparation of utility vegetables and ensure correct portioning of salads, soups, appetizers and cold plates
- Provide variety in menu preparation within budgetary limits
- Select cost-effective recipes ensuring taste, ingredient quality, and portion sizes meet standards
