Job Requirements
- Culinary degree
- Prior executive chef experience
- Minimum 12 years cooking in a restaurant with increasing responsibility
- Experience training staff
- Experience managing budgets and cost controls
- Ability to communicate clearly with all staff
- Willingness to embody company culture
- Familiarity with standard kitchen procedures
- Ability to create efficient systems and clear expectations
- Basic computer proficiency including restaurant management software
- Ability to lift up to 50 pounds
- Must pass a satisfactory background check
Job Qualifications
- Culinary degree
- Prior experience as an Executive Chef
- Solid foundation in broad culinary techniques
- Minimum 12 years cooking experience in a restaurant with increasing management responsibility
- Experience in training, purchasing, managing budgets, and cost control
- Ability to establish clear communication lines with staff and management
- Enthusiastic willingness to own and convey HIOC culture
- Familiarity with SOPs and kitchen procedures
- Ability to develop and implement SOPs and procedures
- Knowledgeable about HIOC shellfish, history, practices, and values
- Basic computer skills including Excel, Word, Micros, email applications, Ctuit or similar software, and Aloha or other POS systems
Job Duties
- Develop recipes and portion specifications in accordance with regional consumer tastes, product specifications, ease of preparation and established procedures and budgetary constraints
- Participate in menu planning activities including purchasing specifications, product and recipe testing and menu development
- Establish realistic plans and set aspirational goals for self and team aligned with HIOC goals
- Oversee procurement of products and ingredients ensuring correct unit count and condition, and adherence to receiving policies
- Ensure all foods are prepared consistently according to restaurant’s recipes, portioning, cooking, and presentation standards
- Investigate and resolve complaints regarding food quality, portion and preparation
- Control all cost of goods sold and usage by managing requisition of products, storage procedures, standard recipes, and waste control
- Prepare operational reports analyzing trends and make recommendations
- Participate in hiring, training, feedback, disciplinary actions, and recognition of staff
- Schedule kitchen staff to meet business activity and labor cost objectives
- Train all kitchen staff in safe operation of equipment, cleanliness, sanitation practices, and compliance with safety policies and health regulations
- Manage as a servant leader, creating extraordinary customer and employee experience
- Support, coach, teach, guide, and assist team as a hands-on manager
- Treat everyone with respect and handle situations with integrity, compassion, and repose
- Lead and follow through change and adversity with a solution-oriented perspective
- Promote and strengthen company culture through understanding and ownership
- Lead direct report team and participate fully in larger Hog Island management team
- Embrace and encourage teamwork and collaboration among staff and co-managers
