Job Requirements

  • Minimum 3 years experience as a BOH manager
  • prior experience in labor and food cost control
  • excellent written and oral communication skills
  • computer proficiency in Microsoft Office Suite
  • comprehension of English oral and written language
  • ability to deal with diverse staff and operate efficiently under pressure
  • strong coaching and development skills
  • ability to produce high volume of accurate, complete, and high-quality work in a timely manner

Job Duties

  • Maintain operational control of purchasing, receiving, purveyor lists, and inventory of all kitchen items
  • develop new menu items, test and write recipes
  • maintain cleanliness in compliance with company standards and Health Department guidelines
  • efficiently operate within pre-established food and labor cost controls
  • actively interact with guests and consistently coach staff on guest relations skills
  • maintain high customer satisfaction through consistently introducing innovative products
  • establish measurable goals and objectives that focus on profit, product and people
  • ensure kitchen equipment is properly maintained and functioning
  • instruct staff in correct usage and care of all machinery, stressing safety
  • ensure staff prepares menu items following recipes and yield guides
  • monitor performance of staff and ensure all procedures are completed to department standards
  • work on line during service and assist wherever needed
  • be aware of any shortages and make arrangements before items run out
  • ensure FOH service staff is informed of discontinued and available specials throughout meal period
  • observe guest reactions and confer with service staff to ensure satisfaction
  • maintain proper storage procedures as specified by Health Department and restaurant
  • provide training and professional development opportunities for kitchen staff
  • ensure company policies, hiring practices, and disciplinary actions comply with laws
  • provide employees with proper training and developmental opportunities
  • ensure efficient use of excess items
  • perform other related duties as necessary
