Job Requirements

  • High school diploma or GED
  • Culinary degree or equivalent experience preferred
  • ServSafe sanitation certification
  • Minimum of 5 years experience in a related culinary leadership role
  • Experience in private club, fine dining, or hotel environment preferred
  • Ability to work all shifts including days, nights, weekends, and holidays
  • Knowledge of California health and labor regulations
  • Proficiency with Microsoft Word and Excel
  • Capacity to bend, stoop, lift up to 25 lbs and up to 50 lbs with assistance
  • Ability to stand for prolonged periods
  • Ability to operate computer and kitchen equipment
  • Ability to work indoors and outdoors in varied weather conditions
  • Ability to move freely in a multi-floor building
  • Strong communication skills in English

Job Qualifications

  • High school diploma or GED
  • Culinary degree preferred or similar experience under highly qualified chefs
  • ServSafe sanitation certification required
  • 5 plus years experience in a similar role preferred
  • Michelin background recommended
  • Experience in private club, fine dining, or hotel kitchen preferred
  • Proficiency in Microsoft Word and Excel
  • Comprehensive knowledge of food allergies and food-borne illnesses
  • Skilled in French, Italian, Middle Eastern, Asian, and Thai cuisines
  • Ability to independently operate in various culinary stations such as saucier, poissonier, friturier, garde manger, grillardian, rotisseur, and entremetier
  • Strong communication skills in English
  • Bilingual abilities considered a plus

Job Duties

  • Maintain and exhibit a solid knowledge and understanding of all food products and skillfully apply culinary and cooking techniques
  • Oversee the food and beverage kitchen budget and profit and loss
  • Approve invoices and capital expenditures
  • Attend food and beverage management meetings and club committee meetings as required
  • Streamline projects according to the General Manager's specifications
  • Maintain monthly inventories and stay within the approved budget
  • Create employee work schedules using the company’s POS system
  • Contribute new ideas for menu creation and food preparation and implement menu changes as needed
  • Supervise cooks and oversee the preparation, portioning, garnishing, and storage of food and labor costs
  • Ensure a clean and safe environment is maintained in kitchen and storage facilities in accordance with California Health Department standards
  • Train, supervise, and mentor a team of over 30 employees in menu preparation and operation of equipment
  • Develop staff training manuals regularly
  • Drive continuous improvement in member and guest services
  • Ensure product quality, freshness, and presentation meet club standards
  • Manage ordering, scheduling, and other administrative duties
  • Execute restaurant and banquet services in relation to service standards
  • Maintain an understanding of California labor laws and foster a positive work environment
  • Adhere strictly to policies outlined in the food and beverage kitchen employee manual
  • Perform other duties as assigned
