Job Requirements
- Associate degree or equivalent experience
- Minimum five years of culinary or kitchen management experience
- Experience in high volume foodservice operations
- Hands-on chef experience
- Knowledge of food safety and sanitation standards
- Proficiency with computer applications including Microsoft Office
- ServSafe certification
- Ability to participate in client satisfaction activities
- Excellent leadership and communication skills
Job Qualifications
- A.S. degree or equivalent experience
- Minimum 5 years progressive culinary or kitchen management experience
- Extensive catering experience a plus
- Experience with high volume, complex foodservice operations
- Institutional and batch cooking experience
- Hands-on chef experience
- Knowledge of food trends, quality, production, sanitation, cost controls, presentation
- Proficient with computers including Microsoft Office, Outlook, e-mail, and Internet
- Willingness to participate in client satisfaction programs
- ServSafe certification
Job Duties
- Lead daily culinary production in food preparation and presentation
- Determine food presentation and create decorative displays
- Provide direction on menu development and create specials
- Source fresh food and monitor produce and meat quality
- Maintain product consistency through inspections
- Research customer preferences and develop local flavor menus
- Prepare and cook foods for special functions
- Demonstrate new cooking techniques to staff
- Supervise and coordinate cooks and workers
- Ensure compliance with health, safety, and sanitation standards
- Provide guidance and set performance standards
- Communicate safety procedures and monitor compliance
- Monitor quality of raw and cooked food products
- Follow and enforce food safety guidelines
- Maintain standards for purchasing, receiving, and food storage
- Participate in business strategy development
- Manage department controllable expenses
- Implement purchasing and receiving control procedures
- Analyze financial and operational data for planning
- Develop and manage department budget
- Identify revenue and expense opportunities
- Control food cost, labor, and expenses
- Oversee food inventory and purchasing
- Schedule staff based on forecasted volumes
- Create resident satisfaction through training and resources
- Maintain professional appearance and communication
- Provide coaching and feedback
- Empower employees for excellent customer service
- Ensure genuine hospitality and teamwork
- Use teamwork to support guests and employees
