Job Requirements

  • High school diploma
  • Current and approved sanitation certification or ability to obtain within 6 months
  • Safe Food Handling certification
  • Minimum three years supervisory experience as Executive Chef or equivalent
  • Over seven years experience managing high-volume commercial kitchens
  • Five plus years fine dining cooking experience preferred
  • Ability to work flexible schedule including nights, weekends, and holidays

  • Mastery of diverse cooking methods, ingredients, and procedures
  • Knowledge of current culinary and market trends
  • Proficient in time management and organizational skills
  • Computer skills including online purchasing and inventory management
  • Excellent kitchen and staff management abilities
  • Strong mathematical skills for budgeting
  • Effective communication skills
  • Ability to work flexible schedule including nights, weekends, and holidays

Job Duties

  • Supervises and oversees the kitchen staff in food preparation and service
  • Assists with preparation and service of foods for other departments and special occasions
  • Ensures special diet orders are completed accurately
  • Directs daily food production operations including menu planning, purchasing, and inventory management
  • Oversees food portioning, garnishing, presentation and safe storage
  • Orders food and kitchen equipment
  • Maintains sanitation and organization of kitchen and dining facilities
  • Trains chefs and serves as a technical expert
  • Delegates and prioritizes staff activities
  • Ensures all staff certifications and training are up to date
  • Provides feedback and performance evaluations
  • Ensures compliance with federal, state, and local regulations including ServSafe and HACCP
  • Maintains safety and loss prevention standards
  • Follows sanitation and food safety procedures
  • Manages budget and controls costs related to labor, inventory, and materials
  • Establishes and communicates operating standards and quality improvements
