Job Requirements

  • Ability to stand for 10-14 hour shifts
  • able to train and manage large staff
  • experience with opening and closing procedures
  • proficiency in producing monthly inventories
  • working knowledge of POS systems
  • able to obtain and maintain necessary licenses and certifications as per local gaming regulations

Job Qualifications

  • Experience in high volume food sales
  • leadership and team building skills
  • minimum four years management experience
  • minimum seven years foodservice experience
  • strong technical and natural cooking abilities
  • college degree preferred
  • at least five years in multi-unit food and beverage or casino/hotel operations
  • knowledge of food and beverage service standards, storeroom procedures, and cooking methods
  • bilingual preferred

Job Duties

  • Create and maintain an upbeat, productive, and educational kitchen environment
  • project a positive attitude and respect for all employees and food
  • provide ongoing training and continuous improvement in product and workplace safety and sanitation
  • give feedback and direction to chef team for development
  • participate in weekly Food & Beverage management meetings to discuss business and kitchen roles
  • work with management and front-line teams to increase guest counts and develop loyal guest base
  • assist with staffing by recruiting and hiring quality employees for all kitchen positions
  • establish training systems for all employees on safety, handling, and menu knowledge
  • complete bi-annual and annual performance reviews for culinary staff
  • manage employee files and document disciplinary actions, counseling, accidents, terminations, and status changes
  • assess culinary team development and create action plans for growth
  • maximize sales and control food and labor costs through regular P&L review and action planning
  • monitor labor reports to minimize overtime and conduct weekly food cost assessments
