Job Requirements
- Education level as required by company
- Minimum five years of relevant kitchen management experience
- Experience in high-volume entertainment or hospitality environment
- Current ServSafe certification
- Ability to supervise and lead a diverse kitchen team
- Physical ability to perform tasks in a fast-paced, standing environment
- Commitment to maintaining health and safety standards
- Strong communication and organizational skills
Job Qualifications
- Five plus years of kitchen management or executive chef experience
- Bachelor’s or culinary degree preferred
- Experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- Extensive experience in banquet style events
- Experience managing and developing teams
- Current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- Adhere to the companys mandated F&B menu and purchasing programs
- Maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations
- Review monthly profit & loss statements and make adjustments as necessary
- Work with the Operations team and Sales staff to plan, supervise, and execute for all events, supervising the preparation and service of all food and beverage including cleanup
- Assist with cooking when needed
- Estimate food consumption and make purchases as appropriate from specified food programs
- Schedule staff efficiently to accommodate shifts in business volume
- Work with management to recruit, hire, train, and retain kitchen staff
- Develop key staff including sous chefs and lead cooks
- Ensure product quality, freshness, and presentation meet company standards
- Supervise preparation, portioning, garnishing, and storage of all food
- Manage kitchen equipment maintenance
- Conduct sanitation audits and cleaning schedules to comply with local Department of Health regulations
- Report critical issues to the General Manager
