Job Requirements

  • Must have a high school diploma or GED
  • Minimum of 8 years culinary experience in high volume facilities producing meals for large events
  • Serv Safe certified or hold a food handlers certificate
  • Ability to maintain local health codes and sanitation standards
  • Excellent organizational and communication skills
  • Ability to work with limited supervision
  • Ability to work irregular hours including nights, weekends, and holidays
  • Ability to interact effectively with all levels of staff including management

Job Qualifications

  • High school diploma or GED
  • Minimum of 8 years culinary experience in high volume facilities producing meals for large events
  • Knowledge of local health codes and food safety regulations including HACCP and Serv Safe
  • Excellent organizational and planning skills
  • Strong communication and interpersonal skills
  • Customer service oriented
  • Ability to work with limited supervision and interact with all levels of staff
  • Flexibility to work irregular hours including nights, weekends, and holidays

Job Duties

  • Research and develop menu items aligned with industry trends and local seasonal ingredients
  • Ensure recipe compliance and quality control throughout production
  • Maintain health department score of 90 or above and a third-party audit score of 95 or above
  • Create and manage culinary production schedules to meet business demands
  • Manage department budget controlling labor and cost of goods expenditures
  • Maintain active involvement in local hospitality community and professional associations
  • Oversee kitchen equipment cleanliness and maintenance in coordination with facility maintenance
  • Monitor and seek labor efficiencies to reduce costs and enhance guest experience
  • Hire and train kitchen and stewarding staff compliant with Serv Safe and health regulations
  • Manage culinary and stewarding personnel to achieve labor and production objectives
  • Order, receive, and prepare all food items maintaining food costs and budget goals
  • Produce required products according to Banquet Event Orders
  • Develop client proposals including tastings and host chef’s tables
  • Create creative menus with appealing food presentations for catering and concessions
  • Manage inventory ensuring all outlets are adequately supplied and track waste and spoilage
  • Perform related duties as assigned by management
