Job Requirements
- high school diploma or equivalent
- 5+ years of kitchen management or executive chef experience
- experience in high-volume retail, entertainment, hospitality, or restaurant venue
- current ServSafe certification
- ability to lead and manage a team
- strong communication and organizational skills
- ability to work in fast-paced, high-volume environments
Job Qualifications
- 5+ years of kitchen management or executive chef experience
- bachelor’s or culinary degree preferred
- experience in high-volume retail, entertainment, hospitality, or restaurant venue required
- extensive experience in banquet style events
- experience managing and developing teams
- current ServSafe certification required
- ServSafe instructor certification or ability to be certified preferred
Job Duties
- adhere to the company’s mandated food and beverage menu and purchasing programs
- maintain budgeted revenue, costs of sales, labor, supplies, and operating cash flow as it relates to food operations
- review monthly profit and loss statements and make adjustments as necessary
- work with the operations team and sales staff to plan, supervise, and execute all events including food and beverage preparation, service, and cleanup
- assist with cooking when needed
- estimate food consumption and make purchases as appropriate from the specified food program
- schedule staff efficiently to accommodate shifts in business volume
- recruit, hire, train, and retain kitchen staff including sous chefs and lead cooks
- develop key staff
- ensure product quality, freshness, and presentation meet company standards
- supervise preparation, portioning, garnishing, and storage of all food
- facilitate and manage kitchen equipment maintenance
- conduct sanitation audits and cleaning schedules to comply with local Department of Health regulations
- report critical issues to the General Manager
