Job Requirements

  • Five years of executive chef kitchen/culinary management experience at a full-service, upscale restaurant concept
  • One to two years experience in a similar executive chef or culinary leadership position
  • Ability to maintain consistent food quality standards
  • Strong communication skills to provide feedback and training
  • Willingness to obtain food handlers certification following OSHA and HACCP standards
  • Ability to conduct monthly food safety and sanitation reviews
  • Capability to lift and carry up to 50 lbs
  • Comfortable working in environments with extreme temperature exposure
  • Ability to stand, walk, bend, squat, and reach above shoulder level frequently
  • Proficiency in reading and writing English
  • Manual dexterity for keyboarding and repetitive tasks

Job Duties

  • Maintain food quality standards for the restaurant
  • Oversee all phases of food procurement, production, and service including inventory, ordering, storage and rotation, food preparation, recipe adherence, plate presentation, and production time standards
  • Provide clear feedback to kitchen team including staff and leadership
  • Give immediate feedback on food quality, execution, and presentation
  • Follow recipes and procedures per Jolt system
  • Achieve target ticket times while maintaining food quality
  • Maintain kitchen equipment and storage areas in clean condition
  • Conduct monthly housekeeping, food safety, sanitation, and facility reviews
  • Ensure kitchen cleanliness and compliance with health department audits
  • Complete daily culinary line checks and sanitation checks
  • Train, develop, and motivate team members and leaders
  • Follow the training guide program ensuring team members achieve passing scores
  • Communicate positively with leaders, staff, and guests
  • Ensure adherence to food safety, sanitation, and storage practices
  • Assist General Manager in meeting sales, revenue, and profitability targets
  • Maintain safe working conditions per OSHA and government regulations
  • Perform duties across all restaurant positions and train others
  • Counsel, coach, and evaluate staff regularly
  • Use Daily Shift Card and train others in its use
  • Take responsible action to solve problems and handle disciplinary matters
  • Obtain Food Handlers Certification as required
