Job Requirements

  • Two plus years of post-high school education
  • Five plus years of employment in related position
  • Experience in hotel environment preferred
  • Advanced food service management knowledge
  • Leadership and staff development capabilities
  • Strong communication skills
  • Ability to handle deadlines and work under pressure
  • Familiarity with safety and sanitation regulations
  • Availability to work regular hours and comply with attendance policies

Job Qualifications

  • Two plus years of post-high school education, culinary education desirable
  • Five plus years of employment in a related position
  • Hotel experience preferred
  • Advanced knowledge of principles and practices within the food profession including management and food and beverage operations
  • Knowledge of hotel operations including marketing plans, safety programs, personnel relations, business plan preparation, repairs, maintenance, budget forecasting, quality assurance, hospitality law and long-range planning
  • Leadership skills to motivate and develop staff to achieve goals
  • Ability to work effectively under time constraints and deadlines
  • Effective verbal and written communication skills adaptable to different audiences

Job Duties

  • Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing
  • Manage human resources in the kitchen to attract, retain and motivate staff while providing a safe environment
  • Interview, hire, train, develop, empower, coach and counsel kitchen associates
  • Conduct performance and salary reviews, resolve problems, provide communication vehicles, and discipline or terminate as appropriate
  • Plan and manage procurement, production, preparation and presentation of all food in a safe, sanitary, cost-effective manner
  • Monitor and control maintenance and sanitation of kitchen and equipment to meet federal, state, corporate and franchise standards
  • Develop, implement and manage the department's budget including labor and food cost control to meet or exceed objectives
  • Develop and implement menus and backup plans according to corporate guidelines to improve revenues and profit margins
  • Execute and promote the Accident Prevention Program
  • Comply with attendance rules and be available to work regularly
  • Perform other job-related duties as assigned
