Job Qualifications
- Culinary Arts Degree
- ServSafe Certification
- knowledge of HAACP
- five years of chef experience in high-volume environments such as restaurants, country clubs, catering, or cultural attraction venues
- strong interpersonal and communication skills
- proven leadership and team-building abilities
- exceptional problem-solving and decision-making skills
- financial management, merchandising, analytical, planning, and leadership skills
- flexibility to work varied hours including nights, weekends, and holidays
- computer proficiency for basic office functions
Job Duties
- Interview, hire, evaluate, reward, and coach kitchen personnel as appropriate
- develop culinary training programs and serve as a culinary resource
- ensure safety training completion with all staff upon hire
- train kitchen personnel in safe equipment and food production procedures
- assist General Manager with sales forecasting
- direct and coordinate kitchen and dish room staff
- maintain positive working relationships with client staff
- manage employees according to labor laws
- maintain a clean, safe, and organized work environment
- uphold company policies and procedures
- perform SSA EXTRA Guest Service steps
- supervise period end inventory for food and beverage
- direct and participate in daily food preparation and special functions
- monitor cooking and holding temperatures
- establish equipment maintenance schedules and provide safety training
- ensure consistency and quality of food operations
- inspect food preparation and sanitation standards
- place food product orders and maintain vendor communication
- evaluate raw and finished food quality
- implement sanitary practices and comply with food safety regulations
- process invoices to ensure vendor payments
- manage culinary operational functions
- control food costs and waste
- prepare operational reports and analyses
- analyze sales and inventory
- manage payroll and controllable profit
- schedule staff according to budget and forecast
- achieve sales and budget goals
- incorporate sustainable resources into culinary selections
- promote inclusivity and sustainability efforts
- support community engagement and giving back
- perform other duties as assigned
