Job Requirements
- High school diploma
- 7 to 12 years in professional kitchens
- 3 to 5 years in a leadership role such as Sous Chef
- ServSafe Food and Alcohol Certification
- Prior experience in restaurant or hospitality
- Ability to communicate effectively
- Good judgment for independent decision making
- Physically able to perform kitchen duties including lifting up to 50 pounds
- Ability to work approximately 50 hours per week
- Availability to work 7 days a week including holidays
Job Qualifications
- 7 to 12 years in professional kitchens
- 3 to 5 years in a Sous Chef or similar leadership role
- Culinary degree or certificate preferred
- High school diploma required
- ServSafe Food and Alcohol Certification required
- Experience in a restaurant or hospitality setting
- Leadership skills including listening, motivation, respect, and communication
- Advanced proficiency in seafood and shellfish preparation and plating
- Knowledge of upscale ingredients and culinary trends
- Good judgment and problem-solving ability
- Excellent guest service skills
- Ability to understand guest needs
- Proficiency in Microsoft Outlook
Job Duties
- Manage and direct the work of all heart of house (HOH) departments in the absence of the Chef
- Interpret, implement, and enforce management policies and operational practices
- Control food costs by ensuring properly billed and received products, and investigating variances
- Control labor costs effectively
- Ensure adherence to food safety, sanitation, allergy, OSHA regulations, and company policies
- Perform duties of other management personnel as needed
- Address guest complaints and resolve satisfaction issues promptly and professionally
- Utilize company business systems including POS, HRIS, hiring/selection, scheduling, inventory, and labor management systems
- Assign, direct, review, and approve the work of Sous Chefs and HOH team members
- Develop and mentor Sous Chef and HOH associates, providing ongoing coaching and performance management
- Determine appropriate staffing levels and manage breaks, meal periods, and shift cuts
- Participate in interviewing and hiring processes for team members
- Conduct performance appraisals
- Handle discipline and performance management
- Authorize and assign overtime when necessary
- Ensure company recipes and approved products are followed
