- Ability to obtain and maintain a Tribal Work Permit
- valid health card or Serve Safe equivalent
- hepatitis A vaccination
- provide and maintain a valid ServSafe Certificate within 6 months of hire
- available and willing to work nights, weekends, and holidays
- ability to lift and move objects over 80 pounds

Job Qualifications
- High school diploma or GED
- culinary arts certificate or degree preferred
- six years related experience or equivalent combination of education and experience
- three years supervisory experience
- computer literate with knowledge of Microsoft programs
- diverse cooking skills and high volume experience
- skill in problem solving under pressure
- ability to work with mathematical concepts related to food
- strong organizational, communication, motivation and leadership skills
- ability to maintain effective relationships at all levels
- employment contingent on favorable background investigation
Job Duties
- Ensures compliance with gaming compact, internal controls, and regulatory policies
- teaches various cooking methods to staff
- assists chef in creating specialty dishes
- ensures health and sanitation standards
- reviews kitchen operations for improvements
- involved in menu planning and development
- manages daily, weekly, and month-end inventory
- delegates prep work to cooks
- reviews team member performance with chef
- requisitions food and wares from purchasing
- maintains high food quality and appearance standards
- follows FDA food safety and sanitation guidelines for HACCP
- performs quality control checks
- maintains exemplary attendance and work standards
- responsible for interviewing, hiring, training, planning, assigning, and directing team members
- addresses complaints and resolves problems
- monitors food and labor cost controls
- assumes kitchen responsibilities in chef's absence
- performs other tasks as requested by chef and executive chefs
- coaches team members and administers progressive correction action
- may be a panelist for internal review hearings
- performs additional duties as assigned
