Job Qualifications
- 3+ years professional bakery experience with work in donut, pastry, or high-volume bakery product development
- Strong knowledge of dough formulation, fermentation, proofing, frying/baking science, and finishing techniques
- Experience writing standardized recipes, scaling formulas, and production documentation
- Working knowledge of food-safety regulations and sanitation best practices
- Clear communication skills and experience training or supervising production staff
- Ability to perform physical bakery work, lift up to 50 lbs, stand for extended periods, and work early shifts as required
- Culinary arts, baking and pastry, or food science certificate or degree
- Experience in commissary or multi-location production scale-up
- Familiarity with yield-costing, allergen control, and shelf-life testing
- Experience using bakery production software or inventory systems
Job Duties
- Lead development of new donut recipes from concept through pilot production and scale-up
- Create and maintain standardized recipes, production formulas, baker's percentages, and clear batch cards
- Conduct bench trials and pilot runs, record outcomes, and iterate on formulations for texture, flavor, shelf life, and cost
- Work hands-on in production at least two days per week to validate processes and train baking staff
- Implement quality-control checks and sensory criteria to ensure consistency across shifts and locations
- Collaborate with procurement on ingredient sourcing, cost targets, and supplier specifications
- Document HACCP, sanitation, and food-safety procedures relevant to recipe execution
- Train production team on new recipes, scaling techniques, and equipment use
- prepare training materials and SOPs
- Troubleshoot production issues such as dough handling, proofing, frying/baking, glazing, and finishing and recommend process improvements
