Job Qualifications
- Previous dishwashing or stewarding experience in a professional kitchen preferred
- Experience in elevated or fine dining environments highly valued
- Familiarity with commercial dishwashing equipment and back-of-house operations
- Knowledge of proper cleaning, sanitizing and storage procedures
- Understanding of food safety guidelines and sanitation standards
- Strong attention to detail with a commitment to maintaining flawless presentation
- Ability to operate industrial dish machines and three-compartment sink systems
- Knowledge of safe use of chemical cleaning agents, sanitizers, and personal protective equipment
- Ability to stand for long periods, lift up to 50 lbs and work in a fast-paced environment
- Strong communication skills and ability to work in a team
- Maintains professionalism, reliability and flexibility
- Willingness to support both kitchen and front-of-house teams as needed
Job Duties
- Operate and maintain industrial dishwashing equipment safely and efficiently
- Clean and sanitize dishes, glassware, utensils, pots and pans according to cleanliness and sanitation standards
- Sort, scrape, and pre-rinse items prior to machine washing
- Wash delicate or non-machine-safe items by hand when necessary
- Inspect all items for spots, streaks, chips or damage before returning them to service
- Follow all health department regulations and sanitation policies
- Monitor and maintain proper water temperature, sanitizer levels, and cleaning chemicals
- Use PPE properly at appropriate times
- Keep all dishwashing and kitchen areas clean, organized and free of debris
- Clean and sanitize sinks, dish stations, mats, drains, and equipment daily and at the end of each shift
- Report any machine or equipment malfunctions or repair needs
- Separate and dispose of trash, food waste and recycling in designated areas
- Ensure timely delivery of clean dishware and service items to kitchen and front-of-house staff
- Work collaboratively with both back-of-house and front-of-house teams
- Restock kitchen stations with clean and sanitized items throughout service periods
- Perform opening, closing and assigned sidework duties consistently and thoroughly
- Attend and participate in staff meetings and trainings
- Maintain professional demeanor, grooming and appearance
- Perform additional duties as assigned by management
