Job Requirements
- 6+ months steward or dish experience in a high-volume kitchen preferred
- knowledge of basic sanitation, ware washing, and safe chemical handling
- Food Handler certification or ability to obtain
- organized, reliable, and team-oriented
- able to follow checklists and direction in a fast-paced environment
- schedule flexibility including nights, weekends, and holidays

Job Duties
- Sort, scrape, and rack wares
- load and unload dish machines according to specifications
- air-dry dishes without towel drying
- set up, monitor, and break down dish machines
- check temperatures and sanitizer levels, delime dish machines as scheduled
- use 3-compartment sink for wash, rinse, and sanitize processes and test sanitizer concentration
- ensure plates, glassware, silverware, cookware, and utensils are spotless and promptly returned to stations
- polish glassware and silverware as needed, safely handle and report breakage
- maintain cleanliness by sweeping, mopping floors, and keeping dish areas dry and organized
- follow Department of Health sanitation, allergy, and chemical safety protocols
- complete opening, closing, and deep-cleaning tasks including walls, hoods, filters, racks, mats, and trash areas
- maintain par levels and restock stations during service
- organize walk-ins, dry storage, and shelves with proper labeling
- manage waste disposal including cardboard breakdown, trash, compost, grease, and recycling per policy
- assist with receiving counts, quality checks, date-labeling, and product storage
- handle kitchen equipment properly and report malfunctions
- communicate shortages, sanitation issues, or 86'd wares to leadership promptly
- support back-of-house and front-of-house during peak service
- assist with event and private dining setup and breakdown as assigned
- stand and walk for extended periods
- lift, carry, push, or pull up to 35-50 pounds
- comply with safety requirements including wearing slip-resistant footwear
