Job Requirements

  • Bachelor’s degree in hospitality management or related field preferred
  • Minimum 7 to 10 years of progressive restaurant leadership experience within luxury hotels
  • Strong financial acumen and operational leadership skills
  • Knowledge of fine dining, rooftop dining, cocktail culture, and wine service standards
  • Food Manager Certification required

Job Duties

  • Oversee daily operations of Oak & Amber Steakhouse, Aleteo Rooftop Restaurant, and the Lobby Bar
  • Ensure consistent execution of service standards, food quality, and beverage presentation
  • Implement and maintain standard operating procedures aligned with hotel and brand standards
  • Monitor staffing, scheduling, floor coverage, and operational flow
  • Oversee all cocktail, wine, and beverage programs across assigned outlets
  • Ensure proper execution of cocktail recipes, wine service standards, and responsible alcohol service
  • Monitor beverage inventory, par levels, product selection, and quality control
  • Develop and manage operating budgets, forecasts, and financial performance
  • Analyze revenue, labor, and cost of goods to optimize profitability
  • Implement cost control strategies while maintaining luxury standards
  • Lead, mentor, and support restaurant and bar leadership teams
  • Conduct performance evaluations and support training and development initiatives
  • Foster a culture of accountability, collaboration, and continuous improvement
  • Ensure all dining and bar experiences meet or exceed luxury brand standards
  • Engage with guests and resolve service concerns promptly and professionally
  • Monitor guest feedback and implement improvements to enhance satisfaction
  • Ensure compliance with health, safety, sanitation, and alcohol service regulations
  • Conduct regular inspections of dining rooms, bars, and service areas
  • Ensure adherence to licensing requirements and internal policies
  • Collaborate closely with the Director of Food and Beverage, Executive Chef, Assistant Director of Food and Beverage, and other hotel leaders
  • Participate in menu development, seasonal programming, special events, and promotional initiatives
  • Support hotel wide strategies that enhance revenue, guest engagement, and brand reputation
  • Perform additional responsibilities as assigned by the Director of Food and Beverage and Senior Management
  • Maintain a flexible work schedule including evenings, weekends, and holidays
