Job Requirements
- Bachelor's degree in business or related field
- Five to seven years management experience in food service or concessions industry
- Certification in advanced food service sanitation training course
- Strong communication skills
- Ability to make quick, sound decisions under pressure
- Proficiency in English
- Knowledge of Microsoft Office and POS systems
- Ability to work in a fast-paced environment
- Valid Food Handlers certificate
- Valid Alcohol Service Permit if required by location
- Knowledge of inventory cost control
- Understanding of sanitation and food safety requirements
- Strong mathematical ability
- Responsible cash handling skills
- High level of integrity and confidentiality
- Ability to work independently
Job Qualifications

- Minimum 5-7 years management experience in food service or concessions industry
- Certification in advanced food service sanitation training
- Excellent communication skills with employees, management, and guests
- Ability to make sound operational decisions under pressure
- Proficient in English language reading, writing and speaking
- Strong knowledge of Microsoft Office, POS and timekeeping systems
- Ability to work effectively in a fast-paced, team environment
- Familiarity with all concession locations and their operations
- Valid Food Handlers certificate
- Valid Alcohol Service Permit where required
- Knowledgeable in inventory cost control and menu planning
- Thorough understanding of sanitation, food preparation, alcohol service and safety standards
- Strong math skills including complex calculations
- Cash handling experience
- High standard of integrity, professionalism, ethics and confidentiality
- Ability to work independently with minimal supervision
Job Duties
- Assist in the overall effective management of the catering, concessions and merchandise operations
- Oversee and lead catering sales efforts including directing the catering team and managing sales and marketing activities
- Ensure total compliance with all alcohol service policies and monitor alcohol service during events
- Assist in the management of catered events from set-up to tear-down including communication with staff, culinary teams and guests
- Ensure legal, efficient, professional and profitable operation of the venue
- Generate and review financial reports including budgets, projections, revenue analysis, and profit and loss statements
- Conduct conflict resolution, mediation, arbitration and labor negotiations when applicable
- Author, review and amend policies and procedures as requested
- Author and amend contracts and authorize terms as directed
- Oversee scheduling and labor allocation
- Analyze ticket sales to anticipate staffing needs and project sale to guest ratios
- Evaluate historical sales and purchasing data to identify purchasing patterns and accurate cost of goods
- Program and maintain point of sale systems for accurate reporting and inventory control
- Direct and assist managers in preparing and achieving future goals
- Provide clear direction and follow up on assignments for managers
- Regularly inspect operations to ensure quality standards are maintained
- Prepare and submit required reports on time and ensure departmental reporting compliance
- Develop an effective management team
- Evaluate manager performance and recommend improvements
- Review and assist in the development of menus and marketing plans
- Establish and maintain positive relationships with show managers, suppliers, vendors and the public
