Job Requirements
- Bachelor's degree from an accredited four-year college or university
- Ten years progressive Food & Beverage management experience including three years directing a multi-unit operation
- Proficient in Microsoft applications (Excel, Access, Word)
- Ability to train and motivate personnel
- Delegation, negotiation and diplomacy skills required
- Excellent oral and written communication skills
- Well-developed guest and employee relations skills
- Organizational development and personnel assessment skills
- Knowledge of food cost and labor analysis
- Knowledge of all phases of Food & Beverage and Casino Beverage administration, cost control and familiarity of all food and beverage services
- Physically mobile with reasonable accommodations including ability to push, pull, carry and lift up to 25 lbs and perform physical tasks in varying work areas

Job Duties
- Responsible for directing all Food & Beverage and Casino Beverage operations
- Develops people to provide exceptional service, products and value to guests while maximizing profitability
- Think strategically and operationally about factors such as pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development
- Develop financial, business and capital expenditure plans consistent with property strategic positioning
- Respond to changes in planning assumptions and alter plans as necessary
- Formally present updates to plans and provide explanations and solutions to variances
- Provide leadership and demonstrate behavior consistent with the Code of Commitment
- Ensure receiving, holding and issuance of products meet quality and control standards
- Tie operational challenges to strategic direction in a large organization with dual property responsibility
- Assist in designing and engineering menus
- Implement and audit inventory and cost control systems and procedures
- Enforce all regulatory, internal controls, policies and procedures for compliance
