Job Requirements
- Bachelor's degree or equivalent combination of education and experience
- minimum two years of related experience and/or training
- ability to read and speak English
- meet state age requirements for alcohol handling
- Food Safety and Applicable Sanitation Training
- Alcohol Awareness Training
- frequent standing, walking, tasting, smelling, talking, listening, using hands and reaching
- occasional sitting, climbing, balancing, stooping, kneeling, crawling or crouching
- occasional lifting up to 50 pounds
- ability to work in wet or humid conditions, near mechanical parts, fumes or airborne particles, with toxic chemicals and in extreme temperatures

Job Qualifications
- Bachelor's degree from a four-year college or university
- two or more years of related experience and/or training
- equivalent combination of education and experience considered
- knowledge of wine, spirits and regional cuisines
- leadership and people management skills
- strong written and verbal communication skills
- ability to create high performance teams and work collaboratively
- proficiency in Microsoft Word, Excel, PowerPoint and Outlook
- strong financial accountability and understanding of food and beverage controls
- knowledge of food and beverage service equipment and current trends

Job Duties
- Dedicate majority of each day to management and supervisory duties
- clearly describe, assign and delegate responsibility and authority for operation of food and beverage sub-departments including catering, room service, restaurants, banquets, kitchens, purchasing and stewards
- prepare and monitor annual budget, revenue goals, and expenses
- generate business volume forecasts and plan accordingly
- review and analyze financial and data reports to monitor performance and take corrective actions
- monitor market conditions impacting menu offerings, business volume, and profitability
- execute inventory control and reconciliation
- identify opportunities to control food costs and expenses
- participate in creation of menus and pricing with culinary and management teams
- direct ordering amounts, timing, receiving, invoice settlement, and storage temperature compliance
- research and evaluate vendor opportunities and relationships
- approve catering policies, contracts, and pricing
- oversee event planning, execution and closure
- implement policies and procedures ensuring compliance with company and legal standards
- manage hiring, training, work assignment, performance evaluation, rewarding and disciplining of associates
- address complaints and resolve problems
- manage department members including assistant director, restaurant manager, catering manager, and executive chef
- ensure regular and reliable attendance
