Job Requirements
- Bachelor's degree from an accredited college or university
- ten years of progressive food and beverage management experience
- at least three years of experience directing a multi-unit operation
- proficiency in Microsoft Excel, Access, and Word
- ability to train and motivate personnel
- strong delegation, negotiation and diplomacy skills
- excellent oral and written communication skills
- well-developed guest and employee relations skills
- skills in organizational development and personnel assessment
- knowledge of food cost and labor analysis
- familiarity with all phases of food and beverage and casino beverage administration and cost control
- physical mobility sufficient to push, pull, carry and lift up to 25 lbs, and ability to perform duties requiring bending, stooping, crouching, kneeling and balancing
Job Qualifications
- Bachelor's degree (B.A./B.S.) from an accredited four-year college or university
- ten years progressive food and beverage management experience, including three years directing a multi-unit operation
- proficiency in Microsoft applications (Excel, Access, Word)
- ability to train and motivate personnel effectively
- delegation, negotiation and diplomacy skills
- excellent oral and written communication skills
- well-developed guest and employee relations skills
- organizational development and personnel assessment skills
- knowledge of food cost and labor analysis
- knowledge of all phases of food and beverage and casino beverage administration, cost control and familiarity with all food and beverage services
Job Duties
- Directing all food and beverage and casino beverage operations
- developing people to provide exceptional service, products and value to guests while maximizing profitability
- thinking strategically and operationally about pricing, quality, marketing, price/value perceptions, customer satisfaction, employee training and development
- developing financial, business and capital expenditure plans consistent with the property's overall strategic positioning
- responding to changes in planning assumptions and altering plans as necessary
- formally presenting updates to plans with explanations and solutions to variances
- providing leadership and demonstrating behavior consistent with the company's code of commitment
- ensuring products' receiving, holding and issuance meet quality and control standards
- addressing operational challenges tied to strategic direction with dual property responsibility
- assisting in designing and engineering menus
- implementing and auditing inventory and cost control systems and procedures
- enforcing all regulatory, internal controls, policies and procedures for compliance
