Job Requirements

  • Bachelor’s degree or equivalent experience in hotel, restaurant management or business administration
  • 5 to 7 years of experience at department head level in luxury resort or hotel food and beverage operations
  • Proven leadership skills and ability to manage large teams
  • Strong knowledge of food and beverage industry including wine
  • Excellent communication and interpersonal skills
  • Ability to work under pressure and handle emergency situations calmly
  • Willingness to travel occasionally for professional development
  • Flexible schedule to support 24/7 operational needs

Job Qualifications

  • Currently hold Director of Food and Beverage title
  • Previous luxury resort/hotel experience with 5 to 7 years at Department Head level
  • Solid knowledge of food and beverage and strong wine knowledge
  • Creative, ambitious with strong business acumen and people-management skills
  • College degree preferably specializing in hotel/restaurant management or business administration or equivalent experience
  • Excellent written and verbal communication skills
  • Ability to remain calm under pressure and make effective decisions in emergencies
  • Some travel experience for training, conferences and special events

Job Duties

  • Direct and oversee all aspects of the organization's food and beverage planning and service including menu planning and costs, preparation and presentation of food and drinks, and adherence to quality and safety standards
  • Coordinate selection, training, development, and evaluation of employees and managers in the Food & Beverage Division to ensure established cultural and core standards are met
  • Educate and train all team members in compliance with federal, state and local laws and safety regulations
  • Establish long-term strategic planning for the Food & Beverage Division including multiple outlets such as Truss Restaurant + Bar, Auro, In-Room Dining, Banquets/Private Dining Rooms, CAMPO Pool + Bar, and Culinary
  • Control labor and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control to maximize profit
  • Assist with establishing and achieving quality and guest satisfaction goals by responding promptly to guest questions, complaints and requests
  • Manage day-to-day staffing requirements, plan and assign work, establish performance and development goals, provide mentoring, coaching and regular feedback to improve team member performance
  • Be visible in the operation, recognize and maintain relationships with regular guests, and cultivate relationships with new patrons through marketing and personal relationships
  • Participate in preparation of hotel’s strategic and marketing plans and prepare the Food and Beverage Department budget
  • Work closely with the General Manager and Planning Committee to design effective menus, collateral, amenity options and marketing campaigns ensuring excellent product quality at a fair price
  • Communicate with employees and managers to ensure operational needs are met and attend regular operational meetings to ensure coordination and cooperation between departments
  • Comply with Four Seasons' Category One and Category Two Work Rules and Standards of Conduct
  • Work harmoniously and professionally with co-workers and supervisors
