Job Requirements

  • Bachelor's degree in hotel or food and beverage management
  • Minimum 10 years full-services hospitality experience
  • Restaurant, culinary, and catering experience
  • Preferably experience in cruise operations or large hotel environment
  • Experience managing multiple units in a matrix organization
  • Proficiency with food sanitation standards
  • Strong computer skills
  • Knowledge of food and beverage design
  • Understanding of environmental and regulatory compliance
  • Ability to travel 25 to 50 percent
  • Located or willing to relocate to Miami/Ft. Lauderdale area
  • Ability to work hybrid schedule Tuesday through Thursday in office and Monday and Friday remote

Job Qualifications

  • Bachelor's degree in hotel or food and beverage management
  • 10 plus years of full-service hospitality experience
  • Restaurant, culinary, and catering experience required
  • Experience in cruise operations or large hotel environment preferred
  • Multi-unit experience in a matrix organization
  • Proficiency in food sanitation
  • Strong computer literacy
  • Knowledge of F&B design
  • Environmental and regulatory compliance experience relevant to cruise vessels or US land-based operations

Job Duties

  • Oversee food and beverage operations across seven destinations
  • Manage third-party food and beverage operators including audits for guest service, F&B quality, and public health
  • Directly supervise internal food and beverage teams post-development completion
  • Ensure consistent quality and service standards
  • Define and implement food and beverage models for new developments including menu development, operating procedures, staffing levels, KPIs, cost management, sourcing, and logistics
  • Prepare and monitor annual operational plans and budgets
  • Forecast and manage costs to ensure profitability
  • Develop and execute revenue growth strategies
  • Ensure compliance with safety, sanitary, and regulatory standards
  • Develop and enforce SOPs for food safety and waste management
  • Recruit, train, and develop food and beverage professionals
  • Provide leadership, mentoring, and foster a culture of high performance
  • Build and maintain vendor and supplier relationships
  • Partner with sourcing and concession teams for contract negotiations
  • Lead new restaurant development and operational startup
  • Stay updated on industry trends and implement innovative concepts to enhance guest experience
