Job Requirements

  • high school diploma or equivalent
  • minimum two years experience supervising kitchen food service and dining room operations in a full-service restaurant
  • current servsafe certification
  • proven ability to use production sheets standardized recipes temperature logs and sanitation forms
  • basic knowledge of nutrition and modified diets
  • proven ability to manage food and labor budgets
  • proficient computer skills with ability to learn new applications
  • ability to work flexible hours weekends and evenings
  • ability to pass drug test and meet health and safety employment conditions including required vaccinations as mandated by law

Job Qualifications

  • minimum two years experience supervising kitchen food service and dining room operations in a full-service restaurant
  • ability to recruit coach and manage performance of kitchen dining room staff
  • minimum two years volume cooking experience with ability to cook three to four days per week and produce food at required volume
  • current servsafe certification
  • proven ability to use production sheets standardized recipes temperature logs and sanitation forms
  • basic knowledge of nutrition and modified diets
  • proven ability to manage food and labor budgets and achieve targets
  • proficient in basic computer skills and ability to learn new applications
  • ability to work weekends evenings flexible hours and be available during peak service times

Job Duties

  • deliver consistent high-quality food and hospitality service by following recipes menus and programs
  • post and display weekly and daily menus in accordance with standards
  • complete and utilize production sheets to control food quality and portions
  • ensure adherence to modified diets correct portioning of foods and proper serving methods
  • prepare and serve meals on time and at correct temperatures
  • train on and participate in front-of-the-house operations to ensure a positive customer experience
  • ensure all food in bistro and or other common areas is fresh covered labeled and dated
  • support special events with emphasis on marketing events
  • serve minimum one meal per week in reminiscence and meet with reminiscence coordinator daily
  • partner with wellness team and consultant dietitian to understand individual resident nutritional needs and preferences then deliver snacks beverages and meals accurately
  • participate in resident council meetings and food committee meetings
  • visit with residents during meal periods for feedback on menu
  • ensure coordination of dining room staffing with residential care coordinator before each meal
  • adhere to established product order guides and vendor programs
  • ensure compliance with HACCP and local health department regulations
  • maintain adequate inventory of food and supplies including emergency supplies
  • partner with leadership team to ensure compliance with occupational health and safety requirements and risk management policies
  • enforce procedures such as personal protective equipment fire extinguishers safety data sheets and lockout tagout protocols
  • ensure compliance with local health department regulations and internal standards
  • practice safe food handling to prevent contamination and food borne illness
  • maintain clean organized and clutter-free kitchen environment
  • complete and maintain food production records including cooking and holding temperatures and menu as served
  • maintain sanitation and cleaning records including refrigeration freezer logs cleaning logs and dining room bistro opening and closing checklists
  • partner with maintenance coordinator for equipment repairs and scheduled maintenance
  • manage department budget including food labor and other expenses
  • keep financial tools updated and ensure budgeted allowances are maintained
  • review monthly financial statements and implement plans of action for deficiencies
  • process and submit monthly expenses and budget data timely
  • coordinate with community team to achieve staff economies and cross training
  • conduct regular inventories per accounting guidelines
  • provide overall management including recruiting hiring training and coaching
  • lead and participate in team member meetings and trainings
  • develop working knowledge of state regulations and ensure compliance
  • complete staffing and scheduling according to operational and budgetary guidelines
  • review timekeeping practices and payroll reports daily
  • conduct performance appraisals with meaningful conversations
  • hold team accountable and correct actions with documentation
  • attend regular meetings as required including department and interdisciplinary team meetings
  • stay updated on professional developments through reading attending conferences and training
  • maintain compliance with required trainings
  • perform other duties as assigned
