Job Requirements
- High school diploma or equivalent
- At least two years experience in a supervisory role in a skilled nursing care center, hospital, or similar medical facility
- Certification in an accredited dietetic training course approved by recognized professional bodies
- Knowledge of federal, state, and local dietary regulations
- Ability to maintain sanitary and safe dietary environments
- Strong communication and organizational skills
- Ability to manage budgets and inventory effectively
Job Qualifications
- High school diploma or equivalent
- Certification in an accredited dietetic training course approved by the Association of Nutrition and Foodservice Professionals and/or the Academy of Nutrition and Dietetics
- Two years experience in a supervisory capacity in a skilled nursing care center, hospital, or related medical center
- Training in cost control, food management, and diet therapy
- Basic computer skills
- Customer service orientation
Job Duties
- Interview patient/family to obtain food preferences, habits, diet history and other pertinent nutrition information
- Complete clinical documentation in medical records in accordance with patient care plans and regulatory guidelines
- Prepare for visits from registered dietitians and comply with their recommendations
- Review regular and therapeutic diet orders to ensure accurate service as prescribed and on the menu
- Document patient cultural backgrounds that may affect food consumption
- Monitor freezer and refrigerator temperatures and maintain appropriate records
- Conduct inventory, purchase food and supplies, and monitor receipts for compliance with standards and regulations
- Maintain proper storage, preparation, distribution and serving of food under sanitary conditions
- Supervise tray line service and conduct tray audits to ensure compliance with diet orders and regulations
- Follow procedures for serving partner meals as per company policies
- Supervise cleaning procedures for all kitchen equipment
- Oversee operation of major kitchen equipment ensuring proper use and maintenance
- Monitor food production to maintain nutritive value in meals
- Maintain compliance with budgetary guidelines as outlined by company policies and procedures
