Job Requirements

  • High school diploma or equivalent
  • Minimum two years of supervisory experience in a skilled nursing care center, hospital or related medical center
  • Certification in an accredited course in Dietetic training approved by the Association of Nutrition and Foodservice Professionals or the Academy of Nutrition and Dietetics
  • Ability to comply with federal, state, and local dietary regulations
  • Strong communication skills
  • Proficiency in basic computer skills
  • Ability to manage budgetary guidelines effectively

Job Qualifications

  • High school diploma or equivalent
  • Two years’ supervisory experience in a skilled nursing care center, hospital or related medical center
  • Certified in an accredited course in Dietetic training approved by the Association of Nutrition and Foodservice Professionals or the Academy of Nutrition and Dietetics
  • Customer service oriented
  • Training in cost control, food management, diet therapy, and basic computer skills

Job Duties

  • Interview patient/family to obtain food preferences, habits, diet history and other pertinent nutrition information
  • Complete appropriate clinical documentation in the medical record pertaining to the nutritional needs of the patient in accordance with the patient comprehensive assessment and care plan
  • Prepare for visit from Registered Dietitian and comply with recommendations
  • Review regular and therapeutic diet orders to ensure they are served as prescribed and in accordance to the menu
  • Review and document patient’s cultural backgrounds that may affect food consumption
  • Monitor freezer/refrigerator temperatures in accordance with established procedures and maintain documentation
  • Conduct inventory, purchase food/supplies and monitor receipt for compliance
  • Maintain proper storage, preparation, distribution and serving of food under sanitary conditions
  • Supervise tray line service and conduct tray audits to ensure compliance with dietary orders
  • Follow procedures for serving partner meals as per company policies
  • Supervise cleaning of all kitchen equipment
  • Supervise operation of major kitchen equipment
  • Monitor food production to maintain nutritive value in compliance with guidelines
  • Maintain compliance with budgetary guidelines
