Job Requirements
- Education level in food service management or related field
- minimum two years director-level experience in food and nutrition services
- possession of certification as dietary manager, food service manager or equivalent
- strong communication and interpersonal skills
- knowledge of nutrition care standards and regulations
- problem-solving ability
- ability to supervise and manage a team
- understanding of budgeting and payroll processes
- compliance with health and safety regulations
- preferred COVID-19 vaccination
Job Qualifications
- Two or more years of experience as a director of food and nutrition services
- completion of a minimum course of study in food safety
- certified dietary manager
- certified food service manager
- certification for food service management and safety from a national certifying body
- AA or higher degree in food service management or hospitality
- working knowledge of clinical competencies based on Nutrition Care Standards of the American Dietetic Association
- demonstrated strong communication, interpersonal and customer service skills
- demonstrated problem solving skills
- knowledge of federal, state and local regulations and JCAHO requirements
- familiarity with oral and nutritional supplements, meal patterns and care plans
Job Duties
- Organizes, plans, directs, controls and supervises dietary department functions and personnel
- monitors budgets and payroll records
- reviews financial transactions to ensure expenditures are authorized and budgeted
- reviews medical records and admission nutrition screens to collect nutrition risk data
- identifies patients and nutritional risks and initiates dietitian referrals
- issues nutrition plans, menu plans and nourishment schedules
- monitors intake and acceptance of meals and snacks
- calculates calorie count results
- completes tray line audits weekly
- monitors tray line for accuracy, service, appearance, taste and temperature
- responsible for the standard of service, appearance and cleanliness of the dining room
- tests cooked food for palatability and flavor conformity
- investigates and resolves complaints regarding food quality, service or accommodations
- schedules and receives food and beverage deliveries
- monitors compliance with health and fire regulations regarding food preparation and serving and dining facility maintenance
- additional duties assigned by leadership
