Job Requirements
- Education and/or certification in food service management or related field
- Minimum of two years’ experience in food and nutrition services management
- Knowledge of food safety standards and regulations
- Strong leadership and supervisory skills
- Excellent communication skills
- Ability to manage budgets and financial records
- Ability to ensure compliance with health, safety and regulatory standards
- Availability to oversee dining services and manage multiple tasks
- Commitment to working in a collaborative and caring environment
Job Qualifications
- Two or more years of experience as a director of food and nutrition services and/or completion of a minimum course of study in food safety
- Possess certification such as Certified Dietary Manager, Certified Food Service Manager, Certification for Food Service Management and Safety from a National Certifying Body, or AA or higher degree in Food Service Management or Hospitality
- Working knowledge of clinical competencies based on Nutrition Care Standards of the American Dietetic Association
- Strong communication, interpersonal and customer service skills
- Demonstrated problem solving skills
- Working knowledge of federal, state and local regulations and JCAHO requirements
- Knowledge of serving various nutritional risk categories, DRG coding and data collection
- Familiar with oral and nutritional supplements, meal patterns and care plans
Job Duties
- Responsible for the completion of all nutrition related clerical activities and coordination and follow through of communication throughout the department, including scheduling
- Reviews medical records and admission nutrition screens to collect nutrition risk data
- Identifies patients and nutritional risk using scoring guidelines and initiates Dietitian referrals for assessments
- Issues nutrition plans, menu plans and nourishment schedules
- Monitors intake and acceptance of meals and snacks
- Calculate calorie count results
- Completes tray line audits weekly
- Monitors tray line for accuracy, service, appearance, taste and temperature
- Responsible for the standard of service, appearance and cleanliness of the dining room
- Tests cooked food by tasting and smelling to ensure palatability and flavor conformity
- Investigate and resolve complaints regarding food quality, service or accommodations
- Schedule and receive food and beverage deliveries, checking delivery contents in order to verify product quality and quantity
- Monitor budgets and payroll records and review financial transactions in order to ensure that expenditures are authorized and budgeted
- Monitor compliance with health and fire regulations regarding food preparation and serving and building maintenance in dining facilities
- Additional duties assigned by leadership
