Job Qualifications
- No minimum education required
- one year food experience in a supervisory capacity in hospital, nursing care facility or related medical facility preferred
- ability to cook a variety of foods in large quantities
- ability to read, write, speak and understand English
- ability to make independent decisions when necessary
- tactful dealing with personnel, residents, family members, visitors and government agencies
- knowledgeable of food procedures

Job Duties
- Process diet changes and new diets received from nursing services
- perform administrative requirements such as completing necessary forms and reports and submit to the Certified Dietary Manager
- inspect special diet trays to assure the correct diet is served to the resident
- coordinate food and nutrition services with other departments
- assist in establishing a food service production line to assure meals are prepared on time
- ensure that menus are maintained and filed according to facility policies
- review menus prior to preparation of food
- assist in standardizing work methods
- ensure all food procedures are followed per facility policies
- assume the authority, responsibility and accountability of cook
- sweep and mop floors as directed
- prepare food in accordance with standardized recipes, planned menus and special diet orders
- prepare and serve bedtime snacks
- prepare and serve meals that are palatable and appetizing
- prepare and serve substitute foods to residents who refuse foods served
- ensure appropriate equipment and utensils are provided with each meal tray
- serve food following established portion control procedures
- report occupational exposures to blood, body fluids, infectious materials and hazardous chemicals
- attend and participate in mandatory in-service training programs and workshops
- assist and direct daily or scheduled cleaning duties following facility policies
- dispose of food and waste properly
- prepare food in accordance with sanitary regulations
- follow infection prevention and control policies
- ensure safety regulations and precautions are followed at all times
- maintain department cleanliness and safe conditions
- report accidents, hazardous conditions and missing or illegible safety data sheets
- assist in maintaining clean and properly arranged food storage areas
- recommend equipment and supply needs to the Certified Dietary Manager
- assist in inventorying and storing incoming food and supplies
- assist in food preparation for special meals and parties
- make only authorized food substitutions
- assist in serving meals promptly
- work in food and nutrition services areas including kitchen and dining rooms
- communicate with medical, nursing staff and other department supervisors
- work beyond normal hours on weekends and temporarily in other positions
- attend continuing education programs
- maintain liaison with other department directors for planning food services
- may be subject to handling hazardous chemicals and exposure to infectious waste and diseases.
