Job Requirements
- Basic hot and cold food cooking knowledge
- proficient knife skills
- ability to work in standards of quality and production in multiple outlets such as pantry, Stillwater Bar and Grill, Gallery Cafe, Tap Room and banquets
- minimum six years kitchen experience including two years in equivalent position at premier restaurant, resort or hotel
- high school diploma or equivalent

Job Duties
- Assign tasks to employees with approval of team leaders
- prepare cold food sandwiches, salads, and dressings
- perform basic vegetable preparation including slicing and dicing
- handle preparation of meat, fish, vegetables, and starches
- execute basic hot food preparation using frying, grilling, baking, roasting, and poaching techniques
- prepare sauces including saucier and butter sauces
- prepare all necessary menu items including soups and sauces as directed
- cook for employee dining room including salad bar setup
- maintain recipe cards and assist in new recipe development
- assist in periodic menu reviews and revisions
- work at multiple stations including Stillwater Grill, Tap Room, and banquets
- set up mise en place for stations
- set up buffet stations and perform designated functions such as carving
- uphold highest culinary quality standards in food preparation
- create high-quality daily specials
- maintain schedules for soups and specials
- time cooking to ensure simultaneous completion of entrees
- check quality and consistency of food
- arrange food attractively on plates
- assist with banquet dish up
- add garnishes to plates
- support other cooks and lines promoting teamwork
- assist special events as needed
- maintain cost consciousness
- rotate food in coolers and dry storage to reduce waste
- keep work areas and refrigerators clean
- clean and store equipment properly
- report faulty equipment or unsafe conditions
- train new employees in kitchen responsibilities and skills
- coordinate with butcher for consistent product and inventory
- contribute daily food order items
- communicate production schedule with team leaders
- suggest improvements for food quality and presentation
- comply with all company safety, health, and sanitation procedures
