Job Requirements

Job Duties

  • Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards
  • correctly maintain and use equipment
  • use equipment only as intended

  • be familiar with all hotel services, features, and local attractions to respond to guest inquiries accurately
  • help resolve guest complaints to ensure satisfaction
  • monitor and maintain cleanliness, sanitation, and organization of assigned work areas
  • maintain and strictly abide by state sanitation and health regulations and hotel requirements
  • meet with Sous Chef or Chef to review assignments and changes
  • complete opening duties including cleaning hands, setting up workstation, establishing priority for mise en place, inspecting cleanliness and equipment condition
  • check production schedule and prepare for service
  • start prep work and inform supervisors of shortages
  • assist operations to optimize guest service
  • maintain proper storage procedures
  • minimize waste and control food costs
  • inform supervisors of excess items
  • disinfect and sanitize worktables
  • assist in cooking and presentation during service
  • transport empty and dirty utensils to pot wash station
  • direct and assist stewards with cleanup
  • complete closing duties including proper storage, product rotation, labeling, organizing storage areas, cleaning, restocking
  • review work status and follow-up actions before leaving
  • perform all other assigned duties
  • respect safety and health standards at all times
