Job Requirements

  • High school diploma or GED
  • minimum 5 years experience in various kitchen roles
  • at least 6 months experience in a leadership position
  • working knowledge of guest languages
  • basic computer skills
  • physical ability to lift 50 pounds and stand for long hours
  • ability to work under pressure and multitask
  • sense of urgency

Job Qualifications

  • High school diploma or GED required
  • formal culinary education preferred but not required
  • a minimum of 5 years' experience in varied kitchen positions including food preparation, line cook, fry cook, and expediter
  • at least 6 months experience in a similar leadership capacity
  • working knowledge of the predominant languages of the guests
  • ability to communicate clearly with management, team members, and guests
  • basic computer skills including inventory management and food purchasing
  • physical ability to reach, bend, stoop, and lift up to 50 pounds
  • ability to work standing for long periods of time (up to 9 hours)
  • strong sense of urgency
  • ability to multitask and work under high temperatures and pressure

Job Duties

  • Directly responsible for all kitchen functions including food purchasing, preparation, and maintenance of quality standards
  • sanitation and cleanliness
  • training of employees in methods of cooking, preparation, plate presentation, portion, and cost control
  • ensure that all food and products are consistently prepared and served according to set specifications, recipes, portioning, cooking, and serving standards
  • make employment and termination decisions including interviewing, hiring, evaluating, and disciplining culinary personnel
  • provide orientation and ongoing training of culinary employees
  • oversee and ensure company policies are followed, including fair and consistent discipline
  • fill in where needed to ensure guest service standards and efficient operations
  • monitor all food production and set and update quantities as business needs fluctuate
  • during peak service times, be on the expediting line ensuring consistency and quality
  • prepare all required paperwork including forms, reports, and schedules
  • ensure all equipment is kept clean and in excellent working condition
  • ensure all products are ordered and received according to specifications
  • control food cost and usage through proper purchasing and waste control
  • schedule labor to meet business needs and labor cost objectives
  • administer corrective action for policy violations
  • train kitchen personnel in safe operation of equipment and sanitation
  • maintain cleaning schedules for kitchen areas
  • check and maintain proper food holding and refrigeration temperatures
  • perform shift line checks for consistency and sanitation
  • taste products regularly for flavor profile
  • provide team assistance and support
  • complete monthly inventories accurately and on time
  • keep recipes current and enforce recipe policy
  • communicate openly with management team
  • respond promptly to communications and attend meetings
