Job Requirements

Job Duties
- Maintain complete knowledge of and comply with all departmental policies, service procedures, standards
- Correctly maintain and use equipment
- Use equipment only as intended
- Maintain positive coworker relations
- Be familiar with all hotel services, features and local attractions to respond accurately to guest inquiries
- Help resolve guest complaints ensuring guest satisfaction
- Monitor and maintain cleanliness, sanitation and organization of assigned work areas
- Maintain and strictly abide by state sanitation, health regulations and hotel requirements
- Meet with Sous Chef or Chef to review assignments, anticipated business levels, changes and important information
- Complete opening duties including cleaning hands frequently, setting up workstation, establishing mise en place priority, inspecting cleanliness and readiness of tools and equipment, checking production schedule and starting prep work
- Inform Sous Chef or Chef of shortages
- Assist operations to ensure optimum guest service
- Maintain proper storage procedures
- Minimize waste and maintain food cost control
- Inform Sous Chef or Chef of excess items
- Disinfect and sanitize worktables before use
- Assist supervisors during service for cooking and presentation
- Transport dirty pots and pans to pot wash station
- Direct and assist Stewards for efficient cleanup
- Breakdown workstation and complete closing duties including proper food storage and rotation, cleaning food prep areas, restocking depleted items
- Review work status with senior kitchen staff before leaving
- Help with mise en place, production and service time cooking
- Perform all other assigned duties
- Respect all safety and health regulations at all times
