Job Duties
- Consults daily menu and production sheets to prepare for shifts
- reads recipes and produces products consistent with recipes and production
- maintains departmental standards for all menu items
- places finished products on the line in a timely manner
- ensures faculty, students and staff receive safe food products of the highest quality, freshness, and consistency
- stores all food products properly by wrapping, dating and labeling items
- cleans and sanitizes cook line, equipment, walls, floors, hoods, walk-ins, and line coolers
- promotes teamwork by assisting in cleaning kitchen areas and organizing storage
- observes rules of kitchen safety, sanitation and back door safety
- uses FIFO rule to ensure proper food rotation
- utilizes cleaning chemicals safely according to MSDS
- completes all running, opening and closing side work
- provides friendly and competent customer service
- records food temperature logs of hot and cold food items
- follows all HACCP food safety requirements
- prepares, cooks and bakes foods according to recipes and standards
- evaluates food quality by tasting
- cuts, trims, bones and carves meats and poultry for cooking
- assists in kitchen organization, workflow and other areas as needed
- maintains a professional and clean appearance at all times
- communicates clearly with front of house and management about menu items and portion sizes
- records production information clearly
- prepares components for salads, deli, catering platters, grab-n-go sandwiches, coffee bar items, and retail locations under direction
- prepares baked goods according to recipes and cleans commercial baking equipment
