Job Requirements

  • Background investigation clearance prior to hire
  • Medical clearance prior to hire
  • Pass the Correctional Supervising Cook (Correctional Facility) examination
  • Equivalent to twelfth grade education
  • Two years supervisory experience over cooks and food service workers
  • Knowledge of Title 15, California Retail Food Code, and Diet Manual
  • Ability to maintain safety and security in correctional environment

Job Qualifications

  • One year experience in the California state service as a Cook Specialist II (Correctional Facility) or Cook Specialist II
  • Two years supervisory experience over cooks and food service workers including preparation, cooking, and serving of food
  • Equivalent to completion of twelfth grade
  • Ability to pass required background investigation and medical clearance
  • Knowledge of food safety regulations and correctional facility policies
  • Effective supervisory and teamwork skills

Job Duties

  • Supervise and train staff and incarcerated workers responsible for meal preparation
  • Oversee preparation and dispensing of therapeutic diets per physician orders
  • Ensure compliance with all departmental and institutional policies and procedures including Title 15 and California Retail Food Code
  • Supervise cleaning and sanitation of kitchen facilities and equipment
  • Maintain order and supervise conduct of incarcerated workers
  • Protect and maintain safety of persons and property within the food service area
  • Enforce food safety and hygiene standards in a correctional facility environment
