Job Requirements
- Minimum of 1-year of experience in a commercial, educational, or similar kitchen
- high school diploma or equivalent
- must pass background screening
- must pass drug and alcohol screening
- must be 21 years of age
- ability to stand for an entire eight-hour shift
- capability of lifting, pushing or carrying 45 pounds
- availability to work 40 hours including evenings, weekends, and holidays
- must be available to cover shifts on short notice
- some local travel may be required
Job Qualifications

- high school diploma or equivalent, with provision for waiver by authorized official of CCCJC
- must pass background screening
- must pass drug and alcohol screening
- must be 21 years of age
- prior experience in food services
- knowledge of food service area
- ability to stand for an entire eight-hour shift
- capability of lifting, pushing or carrying 45 pounds
- sufficient interpersonal skills to work closely with kitchen staff, peers, and residents
Job Duties
- Prepare all meals and snacks for residents and qualifying staff at CCCJC
- time food production such that all food is ready at the time of service
- prepare food items according to established recipes and menus in a manner in which preserves food freshness, quality, and appeal
- utilize batch cooking techniques to avoid over or underproduction
- utilize safe food handling techniques at all times
- store food items according to established standards of practice
- utilize proper labeling and dating
- hold prepared food items at appropriate temperatures below 40 degrees if cold, above 135 degrees if hot
- maintain production records including food usage, overages, shortages, customer counts
- maintain established logs such as food temperatures, cooling temperatures, cooler and freezer temperatures
- maintain a clean and sanitized work area
- follow established work rules and regulations
- ready for work in the kitchen, in uniform, at the scheduled time
- properly open and/or close the kitchen including unlocking/locking doors and securing areas
- maintain a safe, tidy, and well-organized work environment
- clean up spills quickly
- wear protective gear as needed
- store wares safely
- communicate needs and concerns regarding food production and kitchen operation to the supervisor appropriately and timely
- assist Food Service Supervisor with paperwork
- monitor kitchen equipment for proper functioning
- report discrepancies immediately
- support other kitchen staff
- be proactive in communication
- monitor communication posting areas closely
- assist Food Service Supervisor in ordering and inventory procedures
- perform ordering in supervisor's absence
- put away and pull stock as needed
- count and log all utensils at least twice for every meal served
- report discrepancies
- help supervise residents during meals when needed
- help train new staff on kitchen functions
- wear closed-toe shoes, hairnet, or designated Justice Center cap
- complete all required trainings annually
- assume any other responsibilities as directed by the Food Service Supervisor
