Job Duties

  • Prepare all meals and snacks for residents and qualifying staff at CCCJC
  • Time food production such that all food is ready at the time of service
  • Prepare food items according to established recipes and menus in a manner that preserves food freshness, quality, and appeal
  • Utilize batch cooking techniques to avoid over or underproduction
  • Utilize safe food handling techniques at all times
  • Store food items according to established standards of practice
  • Utilize proper labeling and dating
  • Hold prepared food items at appropriate temperatures below 40 if cold and above 135 if hot
  • Maintain production records such as food usage, overages, shortages, customer counts
  • Maintain established logs including food temperatures, cooling temperatures, cooler and freezer temperatures
  • Maintain a clean and sanitized work area
  • Follow established work rules and regulations
  • Be ready for work in the kitchen, in uniform, at the scheduled time
  • Properly open and/or close the kitchen including securing doors and equipment
  • Maintain a safe, tidy, and well-organized work environment
  • Clean up spills quickly
  • Wear protective gear as needed such as slicer gloves
  • Store wares safely
  • Communicate needs and concerns regarding food production and kitchen operation to the supervisor appropriately and in a timely manner
  • Assist Food Service Supervisor with paperwork
  • Monitor kitchen equipment for proper functioning
  • Report any discrepancies to supervisor immediately
  • Support other kitchen staff to ensure essential kitchen functions are performed adequately
  • Be proactive in communication and monitor communication posting areas closely
  • Assist Food Service Supervisor in ordering and inventory procedures
  • Perform ordering and inventory tasks in the absence of the Food Service Supervisor
  • Put away and pull stock as needed
  • Count and log all utensils at least twice for every meal served
  • Report discrepancies immediately
  • Help supervise the residents during meals when needed
  • Help train new staff on all kitchen functions
  • Wear closed-toe shoes, hairnet, or designated Justice Center cap
  • Complete all required trainings annually for the kitchen, county, and the facility
  • Assume any other responsibilities as directed by the food service supervisor
