Job Requirements

  • Meet Barely Acceptable level on ability to supervise
  • Meet Barely Acceptable level on aptitude for work with prisoners
  • Provide detailed resume information to support assessment responses
  • Possess an approved Food Protection Manager Certification
  • Electronically upload certification with application
  • Experience with standardized food preparation
  • Ability to make recipe adjustments
  • Knowledge of food safety and sanitation
  • Willingness to work in a secure correctional facility environment

Job Qualifications

  • Sufficient training and experience in food preparation
  • Ability to perform duties of the position effectively
  • Knowledge of cooking techniques and procedures for large quantity cooking
  • Understanding of special and modified diets such as high protein, low cholesterol, low fat, calorie restricted, and sodium restricted diets
  • Certification as a Food Protection Manager from an ANSI-accredited provider
  • Skill in following standardized recipes and adjusting them as needed
  • Ability to work in a correctional environment

Job Duties

  • Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus
  • Prepare, cook, season, and portion food for all meals by following standardized recipes
  • Plan and prepare or coordinate the preparation of entire meals
  • Make substitutions and adjustments in food preparation procedures and seasoning
  • Ensure compliance with food safety standards
  • Manage inventory of kitchen supplies
  • Maintain cleanliness and sanitation of kitchen area
