Job Requirements
- U.S. citizenship is required
- Meet CTAP eligibility criteria if applicable
- Submit documentation to support CTAP eligibility if applicable
- Must pass urinalysis, physical, and background investigation
- Subject to National Crime Information Center and credit checks
- Completion of qualification inquiry regarding misdemeanor crimes of domestic violence for firearm authorization
- Successfully complete Core Value Assessment at a Bureau of Prisons Human Resource Servicing office unless current BOP employee
- Serve a 1-year probationary period
- Provide primary residence proof
- Must furnish detailed information on application to show skills and experience
- Electronic upload of Food Protection Manager Certification
- Must meet the Barely Acceptable level on Ability to supervise and Aptitude for work with prisoners screen-out elements
- Applicant must possess Food Protection Manager Certification
- For BOP employees currently in Cook Supervisor WS-7404 position, the selective factor is considered met
Job Qualifications
- Sufficient training and experience to perform the duties of the position
- Ability to supervise
- Aptitude for work with prisoners
- Knowledge of food preparation principles including recipe development and revision
- Knowledge of procedures for cooking in large quantities
- Understanding of special and modified diets such as high protein, low cholesterol, low fat, calorie restricted, and sodium restricted diets
- Approved Food Protection Manager Certification from an ANSI accredited provider
- Completion of the "Introduction to Correctional Techniques" training course
- U.S. citizenship
Job Duties
- Provide supervision and instruction to 25-30 inmate workers assigned to kitchen duties including cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers
- Provide continual training to inmate workers in production, presentation, and sanitation of food items
- Oversee receiving, storing, and issuing of all food and non-food items
- Manage security operations including key control, yeast control, knife and blade control, inmate accountability, and routine contraband searches
- Maintain overall security of the institution as part of correctional staff duties
- Ensure adherence to standardized recipes and prepare food for regular and modified diet menus
- Plan and coordinate the preparation of entire meals with necessary substitutions and adjustments in food preparation
