Job Requirements
- U.S. citizenship
- Meet conditions outlined in Special Conditions of Employment including passing pre-employment screening and background checks
- Ability to undertake a one-year probationary period
- Must possess Food Protection Manager Certification at time of application
- Completion of 3-week "Introduction to Correctional Techniques" training
- Meet age and other federal employment regulations
- Compliance with selective service registration if applicable
- Willingness to travel occasionally for training or work-related duties
Job Qualifications
- Sufficient training and experience to perform duties of the position
- Ability to supervise
- Aptitude for work with prisoners
- Thorough knowledge of food preparation principles and techniques
- Knowledge of cooking large quantities
- Understanding of special and modified diets including high protein, low cholesterol, low fat, calorie restricted, and sodium restricted diets
- Possession of an approved Food Protection Manager Certification from ANSI-accredited provider
Job Duties
- Provide supervision and instruction to inmate workers assigned to kitchen duties including cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers
- Provide continual training to inmate workers on food production, presentation, and sanitation
- Oversee receiving, storing, and issuing of food and non-food items
- Manage security operations including key control, yeast control, knife and blade control, inmate accountability, and routine contraband searches
- Maintain overall security of the correctional institution consistent with staff responsibilities
- Prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diets
- Plan and coordinate preparation of entire meals following standardized recipes
