Job Requirements

  • Meet minimally acceptable level on ability to supervise and aptitude for work with prisoners
  • Receive at least half of the total possible points in screening assessment
  • Provide detailed information on resume to support assessment responses
  • Electronically upload Food Protection Manager Certification
  • Successful completion of training and experience requirements
  • Ability to work in correctional environment
  • Compliance with food safety regulations

Job Qualifications

  • Sufficient training and experience to perform the duties of the position
  • Ability to supervise
  • Aptitude for work with prisoners
  • Knowledge of food preparation principles and large quantity cooking
  • Understanding of special and modified diets
  • Possession of Food Protection Manager Certification from an ANSI accredited provider

Job Duties

  • Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus
  • Prepare, cook, season, and portion food for all meals by following standardized recipes
  • Plan and prepare or coordinate the preparation of entire meals
  • Make substitutions and adjustments in food preparation procedures and seasoning
  • Ensure compliance with food safety standards and special dietary requirements
  • Develop and revise recipes as necessary
  • Supervise kitchen operations and food service staff
