Job Requirements

  • Meet the Barely Acceptable level on the ability to supervise
  • Meet the Barely Acceptable level on aptitude for work with prisoners
  • Receive at least half of the total possible points on assessment
  • Furnish detailed information on resume to support assessment responses
  • Possess Food Protection Manager Certification
  • Electronically upload certification at time of application

Job Qualifications

  • Sufficient training and experience to perform the duties of the position
  • Ability to supervise
  • Aptitude for work with prisoners
  • Knowledge of food preparation principles and techniques
  • Knowledge of cooking large quantities
  • Understanding of special and modified diets
  • Food Protection Manager Certification from an ANSI accredited provider

Job Duties

  • Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus
  • Prepare, cook, season, and portion food for all meals by following standardized recipes
  • Plan and prepare or coordinate the preparation of entire meals
  • Make substitutions and adjustments in food preparation procedures and seasoning
  • Ensure compliance with special and modified diets such as high protein, low cholesterol, low fat, calorie-restricted, and sodium-restricted diets
  • Supervise food preparation and service activities
  • Maintain food safety and sanitation standards
