Job Requirements
- Meet the Barely Acceptable level on screen-out elements for ability to supervise and aptitude for work with prisoners
- Provide detailed information on resume supporting skills and experience
- Electronically upload Food Protection Manager Certification
- Have sufficient training and experience as per WS-7404 series guidelines
- Be able to independently prepare a variety of meals and manage kitchen operations
Job Qualifications
- Sufficient training and experience to show ability to perform duties
- Knowledge of food preparation principles and cooking large quantities
- Familiarity with special and modified diets such as high protein, low cholesterol, low fat, calorie restricted, and sodium restricted diets
- Ability to supervise staff and work effectively with prisoners
- Food Protection Manager Certification from ANSI-accredited provider
Job Duties
- Independently prepare all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for regular and modified diet menus
- Prepare, cook, season, and portion food for all meals by following standardized recipes
- Plan and prepare or coordinate the preparation of entire meals
- Make substitutions and adjustments in food preparation procedures and seasoning
- Ensure adherence to food safety and sanitation standards
- Supervise kitchen staff and manage workflow to meet meal schedules
- Maintain inventory and order supplies as needed
