Job Requirements
- High school diploma or equivalent
- Minimum cooking experience in a professional kitchen setting
- Ability to stand for extended periods and lift heavy items
- Knowledge and application of food safety regulations and standards
- Willingness to work in varying temperature environments (hot and cold)
- Compliance with PPE usage including aprons, gloves, non-slip shoes, and hairnets
- Valid medical examination clearance
- Excellent eye-hand coordination for safe knife handling
- Effective communication skills
- Ability to work flexible hours including extended shifts if necessary
Job Qualifications
- High school diploma or equivalent
- Proven experience as a cook or in a similar culinary role
- Knowledge of culinary best practices
- Ability to follow standardized recipes and portion controls
- Experience with operating kitchen equipment safely and efficiently
- Understanding of food safety and sanitation standards such as HACCP
- Ability to work effectively in a team environment
- Good communication skills, both verbal and written
- Strong organizational and time management skills
- Ability to manage multiple tasks in a timely fashion
- Knowledge of youth development principles and practices is preferred
- Familiarity with the California Conservation Corps and its mission is an advantage
- Ability to maintain confidentiality and professionalism in the workplace
Job Duties
- Chopping vegetables, portioning proteins, and measuring ingredients
- Following standardized recipes to ensure consistency
- Preparing sauces, stocks, and other foundational components
- Operating kitchen equipment like grills, fryers, ovens, and stovetops
- Cooking menu items to order with accuracy and speed
- Ensuring proper plating and presentation standards
- Adjusting dishes for dietary restrictions when required by the establishment
- Maintaining high standards of food safety and sanitation
- Monitoring food temperatures and storage conditions
- Keeping workstations clean, organized, and compliant with health regulations
- Practicing safe knife handling and equipment use
- Receiving, labeling, and storing food deliveries
- Rotating stock using FIFO (first in, first out)
- Ordering when inventory is low and reporting equipment issues
- Coordinating with other cooks, servers, and kitchen staff during service
- Communicating timing, special requests, and potential issues
- Supporting corpsmembers at all times
- Assisting with menu development or specials
- Prepping for upcoming shifts
- Helping with closing duties such as cleaning equipment, disposing of waste, and inventory
