Job Requirements
- Willingness and ability to work weekends, holidays, and shifts
- ability to lift heavy objects up to 20-25 pounds
- completion of a one-year probationary period
- successful completion of a polygraph examination
- passing a background investigation including review of police, personal, military, and employment histories
- no adult felony convictions or disqualifying criminal history
- ability to converse fluently in English, Spanish desirable
- strong moral character and dependability
- compliance with security and safety protocols
- ability to pass live scan fingerprinting and other related hiring checks
Job Qualifications
- One year of experience working in a kitchen cooking and preparing meals in large quantities
- completion of a certificate program in culinary arts, restaurant management, or related field
- a combination of education, training, and experience equivalent to the above
- knowledge of methods and procedures of quantity food preparation
- knowledge of kitchen sanitation and safe food storage practices
- knowledge of use and care of cooking equipment and utensils
- knowledge of kitchen safety
- knowledge of basic math
- ability to train, supervise, assign, and review work of kitchen workers and inmates
- ability to prepare food following instructions and guidelines
- ability to maintain kitchen and dining areas in sanitary condition
- ability to communicate clearly and provide directions
- ability to organize and prioritize work assignments
- ability to make simple arithmetic computations
- ability to follow written and oral instructions
- ability to prepare and serve food on schedule
- ability to maintain effective working relationships with inmates and staff
- ability to complete skilled quantity cooking with minimal supervision
- ability to write simple memos with correct grammar, punctuation, and spelling
- ability to learn and apply principles of diversity, equity, and inclusion
- ability to work safely and effectively in a high security jail facility
Job Duties
- Prepares and cooks food in accordance with state requirements for prisoner meals
- uses various kitchen equipment such as blenders, mixers, grinders, and slicers
- maintains cleanliness of working area and equipment
- trains and oversees a crew of inmates assigned to prepare, cook, and serve meals and clean kitchen and dining area
- estimates food requirements and instructs inmates in meal preparation
- coordinates the work of the crew to complete food preparation and serving on schedule
- observes the work of inmates to ensure kitchen safety practices and efficiency
- enforces security procedures and reports disciplinary problems to Corrections staff
- performs other related duties as assigned
