Job Requirements
- High school diploma or HSE
- working knowledge of principles of sanitary food preparation
- working knowledge of and ability to make practical application of Department safety policies and procedures including OSHA guidelines
- ability to supervise proper operation of various industrial kitchen equipment
- working knowledge of standard English grammar, spelling and punctuation
- ability to prepare detailed reports
- ability to comply with employer and department policies including attendance, safety, drug-free workplace and personal conduct
- ability to perform arithmetic operations and data-based decisions
- ability to maintain clean and sanitized work areas and proper use of chemical cleaners
- ability to serve the public and inmate population with diplomacy and respect
- ability to communicate effectively with coworkers, departments, jail trustees, vendors and public
- ability to work rapidly and multitask
- ability to perform physical duties including sitting, walking, bending, reaching, lifting objects under 25 pounds, hearing and communication
- ability to work extended and weekend hours
Job Qualifications
- High school diploma or HSE
- working knowledge of principles of sanitary food preparation
- ability to apply sanitary knowledge to preparing large quantities of food
- ability to apply Department safety policies and procedures including OSHA guidelines
- ability to supervise proper operation of a variety of industrial kitchen equipment including dishwasher, steamer, food processor, blender, can opener, scales, meat slicer, vertical cutter, oven, mixer and grill
- working knowledge of standard English grammar, spelling and punctuation
- ability to prepare detailed reports
- ability to provide public access to or maintain confidentiality of department information
- ability to communicate effectively orally and in writing with coworkers, other County departments, jail trustees, vendors and the public
- ability to work in a team environment
Job Duties
- Plans and prepares monthly menus and recipes, planning special meals for detainees with unique dietary needs according to doctor's orders and discussing with dietitian as needed
- prepares and serves meals by adjusting recipes and serving meals as scheduled, ensuring compliance with local health codes
- supervises inmate workers in meal preparation and kitchen sanitation, ensuring cooperation and compliance with sanitary codes
- monitors and maintains inventory by contacting vendors, researching prices, ordering supplies, receiving and verifying deliveries, and keeping storage areas clean and orderly
- ensures security measures by securing kitchen utensils and doors
- monitors kitchen equipment for maintenance or servicing needs
- uses radio to communicate professionally with Jail Deputies
- performs related duties as assigned
